
My mother-in-law and I loved going out to dinner for baked potatoes and salad. It was one of our favorite things to do together. It is such an easy meal to make at home.
A way to make it even easier is to cook your potatoes in the crockpot!
Crockpot Potatoes
per person:
1 large baking potato
1/2 Tablespoon butter or olive oil
kosher salt
10 inch square of aluminum foil
Scrub potato and pierce with a fork. Rub with butter or oil and sprinkle with salt. Wrap with foil and place in crockpot, 8-10 hours on low. Serve with your favorite toppings.

Thank you so much! I absolutely love baked potatoes but I don't make them much because I hate leaving the oven on for 45 minutes to an hour and heating up the whole house. Now we can have them all the time, even with a meal from the crock pot because I am blessed with TWO crock pots! Thank you thank you!

I love this idea!! I will have to try it. I put just about everything in the crockpot, but I never thought about baked potatoes.
You know, I tried this and the potatoes all turned yellow inside and were gummy instead of white and flakey. Any tips for how to avoid yellow and gummy? (Maybe I cooked them for too long?)

Once when my husband was out of town, I plopped some potatoes into the crock pot and took the kids to the ymca so i could exercise. When we got home late we had baked potato bar for dinner. As soon as my husband got home from being out of town, my then 6 year old goes right to him. He said in his best indignent voice, "Last night we had potatoes for dinner-and NOTHING ELSE!" As if he was telling on me-heehee! But this is a great way to have hot potatoes even if you have to be away from home. My newest crock pot has a warm mode where it will cook however long you program it for then hold it at warm-I find this to be invaluable!
