Sausage and Egg Breakfast Sandwiches



Recently, my husband asked if breakfast sausage patties ever went on sale. He had a hankering for Sausage Egg McMuffins, but didn't want to pay the McPrice it would cost to feed our family at the Golden Arches. I was sorry to say, no, those kind of sales rarely cross my path. So, when I saw this at Ralphs this past weekend, I stopped in my tracks.



Packages of Farmer John breakfast links marked down to $.49 each! Couldn't pass them up. I snatched up about a dozen packages and stashed them in the freezer. This morning I tried out my experiment. Links without casings can very easily become patties. Yeah!



Sausage and Egg Breakfast Sandwiches
Serves 4

8 ounce package of breakfast links w/o casings, or sausage patties $.49
1 Tablespoon butter $.10
4 eggs $.40
4 English Muffins, split and toasted $1.00
4 peaches $.59

Line a rimmed baking sheet with foil and preheat oven to 375°. Form patties by combining two links together and patting very thin. There will be a lot of shrinkage, so make them as thin and wide as you can. Bake for 15 minutes, turning once for even browning. Meanwhile, melt butter in nonstick skillet and spread around. One by one, crack eggs into skillet. Flip once set and cook until done. Assemble sandwiches. Serve with fresh peaches.

When combined with fresh fruit, these sandwiches cost less than $.70 per person! Now that's a good. cheap. eat!

Great recipe! My hubby likes the McD's Sausage Biscuits. So I made some of my own up, let them cool, and wrapped them with plastic wrap, and then again with foil. I popped them into a freezer bag and put them in the freezer. Now, whenever he has a craving, he can grab one on his way out the door. It heats in about a minute! ...Next time I make them, I'll add eggs to the ones he eats right away!

We love making these with bacon, cheese and eggs. When we're in a hurry I'll even wrap them in wax paper so we can eat in the car. :)

We also do this when bagels go on sale really cheap. I was able to buy 10 bags of frozen bagels for 24c each with a sale and a coupon. Hello breakfast bagel sandwiches (not to mention bagel pizzas!)

Those look yummy! I have also made them with Canadian bacon, and put them individually wrapped in the freezer. My husband really enjoys those.

I love Mc Ds sausage Mc Muffins too (and only get them if they are 2/$3). But we lov emaking them at home too. I love Ralph's markdowns! Go early in the morning to get the best stock.

Florida prices are high (and even higher on the coast, where I live)....but I absolutely love this idea.

I just ran a quick calculation, and even using organic ingredients it would be cheaper (and *far* healthier!) than McD's!

Oh you are so smart! I got some Jones all natural sausage links in the markdown freezer section at Target (don't you love that they do that). My son just asked me for sausage muffins today.
